easy homemade red enchilada sauce
- 2 tbsp vegetable oil
- 2 tbsp flour
- 2 tbsp chili powder
- 2 cups water
- 3 oz — 1/2 a small can — tomato paste
- 1 tsp taco seasoning or cumin
- 1 tsp garlic powder
- 1/2 tsp salt — or to taste
- cayenne powder — to taste
In small saucepan — whisk together oil, flour, and chili powder. Heat over low heat until it starts to simmer.
Slowly whisk in water. Whisk in remaining ingredients. Bring to a simmer, whisking often. Continue to whisk and simmer until desired thickness.
