Monster Candy Cake recipe

Monster Candy Cake

Way back at Halloween 2018 our daughter stuck some unwrapped candies in the deep freezer for me to make Monster Cookies. Because of the Hashimoto’s, I never found the energy to bake those cookies. Today, I pulled out the bag and used a kitchen mallet to break them up (just like I would for my Monster Cookies) and I baked a cake with them. While it cools on the counter, I’m here posting the recipe. I am on Fire this week!

Monster Candy Cake recipe

  • 1 1/2 sticks butter, melted
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 cups coarsely chopped mixed fun sized candies, (or unwrap, freeze in large freezer bag, and beat with a meat mallet)

Preheat oven to 350. Grease and flour (I use equal parts flour, oil, and shortening blended together to grease my pans) a square baking dish. Set aside.

Beat together butter and sugar until well blended. Beat in eggs then vanilla. Add flour, baking soda, and salt. Mix until fully incorporated.

Fold in candy pieces. Spread batter into prepared pan. Bake for 25 minutes or until golden. Cool in pan.

The good news is Valentine’s candy will work just as well.
