It’s been a minute since I shared a recipe. Things have been so crazy lately, I actually haven’t been the one doing the majority of the cooking around here. My husband was taking on that task while on day shift training for his newest promotion.
His unfortunate need to eat left me and the boy reheating our dinners after work. Fortunately, hubby isn’t a terrible cook. Nevertheless, I am happy to be in control of dinner time again.
One of the first things I made when I took back the reigns of cooking for my family was this creamy, cheesy delicious side of broccoli cheddar rice alongside pan seared pork chops.

Broccoli Cheddar Rice
Ingredients:
- 2 tbsp butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 & 1/2 cups rice
- 3 cups water
- 2 cups milk
- 12 oz bag frozen broccoli
- 1 tsp salt
- 1 tsp Italian seasoning
- 2 cups shredded cheddar
Directions:
In medium saucepan over medium high heat, melt the butter. Sauté the onions until soft. Add the garlic and cook until fragrant (just a minute or two should do). Stir in the rice.
Mix in the water, milk, broccoli, salt, and Italian seasoning. Bring to a boil. Reduce heat to low/medium-low. Simmer, stirring often, until rice is tender and broccoli is soft.
Remove from heat and stir in cheddar until fully melted and incorporated.
Enjoy.
