Tired of turkey dinner? Did you run out of gravy? Do you find yourself wondering what to do with all that leftover turkey? This layered casserole recipe is a great way to re-serve those Thanksgiving leftovers. It also works great with chicken.

Thanksgiving Leftovers layered casserole
Gather your ingredients

- 4 cups leftover turkey; torn into bite-sized pieces
- 12 oz pkg Pepperidge Farm stuffing, any variety, prepared* and cooled
- 14 oz can jellied cranberry sauce
- 1/4 cup mayonnaise
- 2 cups shredded mozzarella
- 4 cups mashed potatoes, prepared and cooled
- 1 egg

Put it together
Preheat the oven to 375*. Spray a 13×9 inch baking dish with cooking spray.
Spread half of the stuffing on the bottom of the prepared baking dish.

Top it with turkey. Press down on the turkey to make a firm and even layer.

Mix together the cranberry sauce and the mayonnaise. Spread the mixture evenly on top of the turkey. Sprinkle with mozzarella.

Beat the egg into the mashed potatoes. Spread evenly over the mozzarella.

Sprinkle the remaining stuffing over the top. Spread carefully with your fingers. Press gently into the potatoes.

Bake for 40 minutes. Rest for 10 minutes. Serve and enjoy.

Cooks Notes
*I prepare mine by bringing 2 cups water, 1/4 cup butter, 1-2 tbsp dried minced onion, and 1-2 cloves minced garlic to a boil then mixing it with the bag of dry stuffing in a large bowl.
