I finally finished the last round of edits and am ready to start preparing for publication. This is a cause for celebration, so I baked a cake. Since I’ve been craving Wacky Cake, which I haven’t had since I was a girl, I decided this was a perfect time to break out the recipe.
Wacky Cake is sometimes referred to as Depression Cake because the recipe was developed when some ingredients were scarce during the depression. If you have never tried wacky cake, you should fire up your oven and give this easy-to-bake cake a try.

Cake
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2tsp salt
- 1 cup sugar
- 1/3 cup cocoa powder
- 2 tbsp vinegar
- 1 tsp vanilla extract
- 1/3 cup vegetable oil
- 1 cup water
Preheat oven to 350°F
In an 8×8 baking dish, whisk together dry ingredients. Make 3 wells. Add vinegar to one, vanilla to the next, and oil to the last. Pour water over the top. Using a rubber spatula, mix together until fully incorporated.
Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
Cool completely before frosting.
Frosting
- 1 cup powdered sugar
- 2 tbsp cocoa powder
- Water
Stir together powdered sugar and cocoa powder. Stir in water a tablespoon at a time until you have a thick frosting.
Spread across the top of the cooled cake. Let set for 20-30 minutes.
